TURF?

ometimes I call myself a meat and potatoes type of girl and then I wake up on other days and declare that I’m all about fish and vegetables. Of course, this doesn’t last very long because it’s costly and I lose interest and start craving for a big juicy piece of beef or a succulent fried chicken wing. There are so many choices to make. It’s like my mind and my mouth can’t stay in sync with each other.

       On days like this when I can’t make up my mind, the first thing that comes to me is surf and turf. What is truly satisfying to me is a moist and delicious crab cake with lots of crab meat in it and not too much filling. Do you know what drives me insane? It’s when I’m watching QVC or HSN and they have for sale Maryland crab cakes with all that crab meat falling out and filet mignon that’s wrapped in bacon, and when they press it down, the juices just flow all over the place. Oh, yes, that sounds good doesn’t it?! I don’t know if it’s that when I watch it I’m always hungry or if it’s TV magic, because those Maryland crab cakes look so good you can’t help but want to pick up the phone and place an order.

       I have to tell you that I have gotten into a lot of trouble watching these shows, especially at night when everyone else is asleep. For me there is no such thing as control when it comes to something that I want, but when there is no flex pay involved on something that I want, I pick myself up off that couch and pull out my ingredients for crab cakes and then the creating begins. After I’m done cooking the crab cakes, you would have sworn that I took a trip to Maryland and handpicked them myself.

       Are you looking for a crab cake recipe? I’ve got one! This recipe is quick and easy. If you want to be a star and known for great crab cakes that taste good, give it a try. For now I have the best of both worlds: crab cakes with a piece of filet mignon accompanied with some smashed potatoes and sautéed greens beans. Now that sounds ridiculous! YUM.

 

        Urban Crab Cakes

     1-lb lump crab meat or can lump crab meat

       ¼ cup mayonnaise

       4   scallions chopped

       ¼ cup diced red pimentos

       1   dash Worcestershire sauce

       2   eggs

       ¾ cup bread crumbs

       Salt and pepper

       Butter (to cook with)

 Combine all ingredients in a bowl except the butter and stir well. Shape the mixture into patties. Melt butter in skillet, add the crab cakes and cook on each side until golden brown, about 4 minutes on each side.
